Arigotou. I post many of my graphics on various sites so I wouldn't be surprised if you've seen them before.
Getting the words to change is actually simple to do but not so easy to explain and a bit time consuming. At lease, the way I do it. I don't know how other people do it...
If you'd like I could make you a Tutorial then post it up here. I've always wanted to do one of those!

I'm glad you're taking that course, you're really lucky that your school offers an Adobe Photoshop/Imageready (that's what I used to make these) course to you! I wish you luck in it!

Oh, and Yumi-san yes, sure. You can be me. Come and live in Canada, where manga is 15 dollars a Vl, it will take you at least 18 months to get your birth certificate and your pocket will be $65.00 lighter, $75.00 if you want it within the the year and you need a birth certificate to get SIN which you need to get a job.
